They quickly set up shop, and their business today is owned by three Italian-American families, who still make salami the old-fashioned way. Calabrese Hot Salami is based on a recipe from Calabria, and while it's definitely hot, it won't cause you to cry. Flavored with peppers and paprika, it's a perfect foil for fresh mozzarella.
