Castelas is produced in the heart of Provence, in the sun-drenched foothills of Les Alpilles. It is the ultimate expression of a new kind of genuine extra virgin Provencal oil - early hand harvested, immediately custom cold pressed and variety blended. It is best described by: a scent of freshly cut grass, great finesse on the palate with hints of artichokes and almonds, distinctly grassy aromas and a slight pepperiness. Castelas is deliberately left unfiltered which explains it rich golden appearance and sediment. This protects all of its personality, originality and the antioxidants it naturally contains. Opens up marvellously very well with marinades, salads and fresh goat cheese.
