In 1917 an Italian family came to San Francisco's North End, bringing with them generations-old salame-making recipes. They quickly set up shop, and their business today is owned by three Italian-American families, who still make salami the old-fashioned way. Herb Salami is aptly named, as it is rolled in a thick, green layer of fine, crushed herbs, and then slowly dry-cured. The herbs add a delicate note to the meat. Whether on a sandwich or appetizer plate, it makes an elegant presentation. Minimum weight 10oz.
