In 1917 an Italian family came to San Francisco's North End, bringing with them generations-old salame-making recipes. They quickly set up shop, and their business today is owned by three Italian-American families, who still make salami the old-fashioned way. Columbus's country-style peppered salami is infused with wine and hand-rolled in freshly cracked peppercorns, giving it a heady, mildly spicy flavor. This one goes quite well with aged Italian sheep cheese, such as Pecorino Toscano Stagionato. Minimum weight 10oz.
