On occasion, the entry to Zabar's cheese department is guarded by a gigantic, formidable fromage: Swiss Emmentaler. Weighing somewhere in the neighborhood of 200 lbs, it is notable for its large eyes; in the cheese world, they refer to these as "noix" because they are the size of walnuts. This semi-firm, smooth-textured cheese is not strong or pungent, but it is full-flavored, nutty and fruity, and has some of the lowest sodium content of any natural cheese's regular recipe. This is an excellent addition to a fondue pot; it melts nicely into quiche or on a burger, or serve as a table cheese with fresh fruit and whole-grain bread. Approximate Weight 8oz.
