In the 8th Century, the Saracens - invaders from the Arab world who migrated up from Spain - were expelled from the Loire region of France. Luckily, they not only left their goats, but their recipes for making goat cheese. Today we enjoy a great variety of chevres, both fresh and aged, from the Loire. From Charentes-Poitou comes Le Chevrot, a short barrel-shaped chevre with a wavy, ivory-colored rind. When young, this cheese is soft and tangy; as it ages, it firms up, becoming flaky, with a more intense, biting flavor. 7oz.
