If Roquefort had a Spanish cousin, she would be Mitibleu, made with the milk of sheep grazing in the mountains of Castille-Leon and produced using methods similar to those for making Roquefort. The pale, cream-colored paste has a beautiful webbing of dark green mold, and the refreshingly tart, milky, minerally flavors are quite eye-opening. Mirableu's finish gives an electric jolt and slightly numbs the tongue. Its crumbly, semi-dry texture lends itself nicely toward salads, but if you love assertive blues, just grab a baguette and dig in. Overnight shipping required. Approximate weight 1-lb.
