In the Catalan dialect, nevat means "snow," and when this artisan-made cheese is intact, it looks like a big snowy mountain with a little tiny peak - the "snow" is the bloomy rind. Even when this flaky, semi-soft sheep's milk cheese is mature (look for small brown spots on its rind), it's gentle with no strong animal flavors. Mildly tangy, nutty, with sweet caramel notes.
