In the Catalan dialect, nevat means "snow covered" and when this artisan-made cheese is intact, it looks like a big snowy mountain with a little tiny peak - the "snow" is the bloomy rind. Even when this flaky, semi-soft sheep's milk cheese is mature (look for small brown spots on its rind), it's gentle with no strong animal flavors. Mildly tangy, nutty, with sweet caramel notes. Very pleasant. Pasteurized. Overnight shipping required. Approximate weight 8oz.
