Underneath the natural ring - rough and brown-gray in color, with fields of red, white,and yellow mold - lies the supple, pale-straw colored paste of St. Nectaire. Look for the scattering of small eyes (are they looking for you too?) The musty, mushroomy aroma of this cheese is reminiscent of the wine cellars where it is aged. Its flavors are milky, nutty and beautifully floral from the milk of the saler cows that graze on the pastures of Auvergne's volcanic-rich soil. One of the classic French cheeses.
