A fine example of terroir, this raw blue from Northern California receives the benefits of the coastal foliage the Holstein cows graze upon, as well as the foggy Pacific air, which infuses the farm's cheese-ripening room. Solid and flaky with a bright paste and dark blue-green striations, this rindless blue is tantalizingly tart and vegetal. The secret recipe was developed by Monty McIntire, former Maytag Blue cheesemaker. Approximate weight 8oz.
