A steel keeps the edges on your quality high-carbon steel knives sharper longer.
With use, the microsopically-fine cutting edge of a hand-ground carbon steel knife will become misaligned. You can't actually see this with the naked eye, but using a sharpening steel before or after every use will keep the edge of the knife aligned and honed and therefore usefully sharp for longer than if you didn't use a steel at all. Simple to use and made for us by the same people who make our signature knives.
