Creamy, runny, and a little mushroomy, it makes a beautiful and delicious addition to a cheese plate. Head cheesemaker Jennifer Lynn Bice uses the milk from her humanely-raised herd of 400 dairy goats. While her farm is not certified Organic, she uses almost exclusively organic farming practices. Camellia, named after one of their favorite does, is pasteurized and aged for 6-8 weeks. Certified kosher.
