This little fresh goat log is based on the classic French recipes from the Loire Valley, but it's made near Mount Tabor, in the northernmost part of Israel. Coated in edible, natural vegetable ash, it is mild and citrusy when young, and as it ages, it becomes more dry and piquant. Pasteurized, made with vegetarian rennet.
