Santoku knives are the general purpose culinary knives of Japan and burst on to the Americal culinary scene in the late 90's. Loosely translated, "santoku" means "three virtues", referring to the three uses for which this style of knife is supremely suited; slicing, dicing, and mincing. It is used in a straight up-and-down motion in contrast to the rocking motion of the western Chef's knife, and is sometimes preferred by people with smaller hands. For many, it is the ultimate vegetable knife.
