We don't mean to sound all "cloak-and-dagger," but our Smoked Sable is made using a Top Secret Recipe, unique to Zabar's. The fish isn't a secret, though; just ask the hordes of New Yorkers who line up for their hand-sliced half-pound. They seek the sweet, buttery flavor of the rich, smooth fish, expertly smoked and lightly dusted with paprika. Saul and Ann Zabar control the specs for curing and smoking these beautiful sides of Alaskan Black Cod. Not to be confused with garden-variety cod, Black Cod is in the Sable fish family, hence the name.
