Description
Italy's most famous blue, and deservedly so! Spicy and earthy, with a pronounced sweet finish (hence the "Dolce" part of the name), this luxuriously creamy cheese becomes more assertive as it ages. Consistently pale paste with blue-green striations when it's young, Gorgonzola develops a pinkish-brown coloring just under the natural rind as it ages. Can be enjoyed at every course: broil on slices of crostini, blend into salad dressing, stir into cream sauce for pasta or meat, or enjoy on its own for a cheese or dessert course with fruit and toasted nuts. Made of cow's milk in the Po River Valley. From Lombardy Italy, and the main source of milk is cow. Aged for a minimum of 3-4 months. Approximate weight 8oz.
