This chevre is covered with a charcoal-gray dusting of vegetable ash. The ash does not change the flavor, rather, it is a tradition that hearkens back to the earliest production of chevres. Soft, mild, and lactic when young, its texture becomes firmer and its flavor becomes more pronounced as it ages. Made of pasteurized goat milk in France's Loire Valley. Approximate weight 8oz.
