This is a lovely washed-rind cheese that has also developed a bloomy rind, giving the texture and flavor the best of both categories of cheese. The soft, rippled, red-orange rind covers a straw-yellow interior: the outer paste is soft and smooth, the inner paste flaky. Its lactic, spicy flavor is less pungent than some washed-rind cheeses, and, being made in the Champagne-Ardenne region of France, it's no surprise it pairs beautifully with that bubbly French white.
