What’s The Difference Between Lox & Nova
You’ll notice Zabar’s sells Nova and Lox. But what really is the difference? Lox is salmon which has been soaked in a cold salt brine and briefly washed, to remove excess salt. Lox is not smoked or cooked; the salt brine preserves the fish. Around the mid-twentieth century the saltiness of lox became out of fashion and many people switched to Nova Scotia-style smoked salmon, known as Novie or Nova. Originating from Canada, Nova is first brined in a brown sugar and salt bath then cold smoked for 18-24 hours. We smoke our Nova the same way today, each “side” is approved by our team weekly before bringing it to the store.
