How do peppercorns become white? Start with black peppercorns. To make them white, the berries are soaked, and the dried skin (the black part) is rubbed off, leaving the interior seed - the white part - intact. When peppery flavor is needed, but specks of black pepper will mar the appearance of the dish, choose white pepper - for instance, in white sauces and mashed potatoes.
