Blue Cheese

Blue Cheeses are very easy cheeses to identify, as their paste is marked by striations or webbing of blue, green, gray, or some combination of the three colors.

Fresh Cheese

Fresh Cheeses are high in moisture (usually at least 60% water) and are meant to be eaten shortly after the curds and whey are separated and salt is added.
