At Zabar's Appy Counter, a customer was recently overheard remarking, after trying a slice of hand-sliced Smoked Sturgeon, "I think that fish is special!" Why would she say that? Could be Zabar's dedication to quality, with no side of fish allowed to be sold without the approval of Saul or Ann Zabar. Maybe she liked the fish because it's the source for caviar. Or the moist, lean texture. Upon further investigation, we found she loved it because of its flavor: nutty, buttery, a little briny, and clean and earthy, reminiscent of a pristine river winding its way through the forest.
